Simplify Instead of Overcomplicate - Let’s Start With the Banana


Overwhelmed.


Overcomplicated.


Overthought.


Over stressed.


I’m over it.


These words just elicit stress by simply mentioning them. In this day and age, we sure have the habit of doing any and all of these “over” things. We do these by habit, by force, or I think mostly because of a lack of clarity and boundaries we have in our lives so we just don’t know when to stop. We need to simplify.


We have too many things to pick from, too many choices, too much stuff, just TOO MUCH! We need to simplify.


I’m going to take this potentially deep conversation and dial it way back and share some simple recipes with the ever-popular banana…


Enjoy the simplicity - and the time-saving nature of these healthy recipes.


Here we go:


  1. Let’s jump right to dessert and enjoy a simple banana ice cream. Throw those (peeled and quartered) ripe nanners in the freezer. When you’re ready for a sweet treat, blend them in your blender along with a little milk and, shazam! You have a simple banana ice cream to enjoy all by yourself (or with others if you’re feeling so generous).


--> For a little variety, try blending in one (or 2) of these for a more complex flavor

profile: vanilla, peanut butter, cocoa powder, or berries. Or, maybe try sprinkling

some smashed cookies, a drizzle of chocolate syrup, cinnamon, or other fruit.

But remember simple is the point here. Enjoy!


  1. Simple banana cookies are perfect for when you have a little bit of a sweet tooth but are short on time. Just mix up 2 bananas, add 1 ½ cups of quick oats, and some chocolate chips (to taste… 😎 ). Bake at 350 degrees for 12-15 minutes. Make a few extras and throw them in the freezer for when that craving calls and feel happy to have that healthy go-to.


  1. Simple banana pancakes are just what you need when that Saturday morning gives you a little extra time to make breakfast but not quite enough time to get in-depth. 1 banana, 2 eggs, and ¼ tsp. of cinnamon are all you need. Mix these well and cook them up in your frying pan until golden brown. Top with your fave pancake topper and enjoy!


  1. Simple banana muffins whaaat? By this point, you shouldn’t be surprised that you can take ½ cup of pureed banana, ½ cup of peanut butter, and 1 egg. Blend them up to make a thick batter and bake at 350 degrees for 12-15 minutes until they give you a nice bounce back when you press on them - I suggest mini muffins on this one.


And finally….


  1. Simple banana pudding so thick you’ll be full in no time. Get your hands on ½ cup of chocolate milk (chocolate almond also works) and blend well with 4 bananas. Pour into a big bowl and mix in 2 tablespoons of chia seeds. Cover and put in your fridge so the chia seeds can plump up overnight. Once they’ve grown, enjoy this sweet treat!


Seeeee, doesn’t simple feel so good? When the “over” starts calling (remember those “over” words from the beginning of this post?), take a deep breath and channel your inner simple banana, it doesn’t have to be complicated, let’s not make it that way if we don’t have to.
